Our kitchen at Hotel Borgholm was for a very long time characterized/minted by Sweden’s strongest, most brilliant and female chef – Karin Fransson. We now continue to cook new successes where we have taken inspiration and learning from that time and now base our gastronomy on Öland’s rich and unique range of herbal based raw products. From our own herbal garden we harvest diligently and out in nature we pick wild herbs, berries and flavours. Lambs from Öland and wild birds belong to a traditional kitchen like ours but we also challenge ourselves to try new influences – as long as the flavour is in focus.

We call/name this The Gastronomic Alvaret from our own herbal garden to Öland’s Alvaret and then back/home again.
