Our kitchen at Hotel Borgholm was for a very long time characterized by one of Sweden’s strongest, most brilliant female chefs – Karin Fransson. We have taken inspiration and learning from that time and now base our gastronomy on Öland’s rich and unique range of greenery. From our own herbal garden we harvest diligently and out in nature we pick wild herbs, berries and flavours. Lambs from Öland and wild birds belong to a traditional kitchen like ours but we also challenge ourselves to try new influences – as long as the flavour is in focus.
We callname this the “Gastronomiska Alvaret”, from our own herbal garden to Öland’s “Alvar” and then back home again.
